There is nothing better than a homemade granola, and this Grainless Granola is the best one I've made. It couldn't get simpler than a handful of wholesome ingredients tossed together and baked until golden and crisp. Paleo, gluten free, dairy free, vegan, and naturally sweetened granola goodness!
My husband and I were in Minnesota back in April. While we were there, we popped into the local Trader Joe’s looking for a granola to go with my morning yogurt and happened to snag their Grainless Granola. It was the best I had ever eaten, and I loved the variety of nuts and seeds. Now, I don’t live near a Trader Joe’s, and I love making my own variations of favorite products at home. I threw together this granola in just a few minutes and yep.. It’s actually better than Trader Joe’s.
I will happily never purchase another bag from TJ’s, when I can sit at home, make this in about 5 minutes, and eat it for days on end without growing tired of it.
Ingredients in Homemade Grainless Granola
- unsweetened coconut chips
- raw nuts (pistachios, almonds, and/or pecans - I like to use a mixture of the three)
- raw pepitas (pumpkin seeds)
- raw sunflower seeds
- sliced almonds
- ground cinnamon
- kosher salt
- pure maple syrup
- coconut oil
- vanilla extract
Steps to Make The BEST Grainless Granola
1. Preheat oven to 300°F and line a baking sheet with parchment paper.
2. In a large bowl, combine coconut, nuts, pumpkin seeds, sunflower seeds, almonds, cinnamon, and salt. Stir to combine.
3. In a microwave-safe bowl, combine the maple syrup, coconut oil, and vanilla. Microwave for 60 seconds and stir to combine. Pour over the nuts/seeds mixture. Toss to combine, making sure everything is evenly coated.
4. Pour mixture out on the prepared baking sheet and spread out in an even layer.
5. Bake for 40-50 minutes, stirring every 10 minutes, until almond slices and coconut are golden brown but not too dark. Remove from the oven and allow to cool. The granola will crisp up more as it cools.
6. Once cool, transfer the granola to an airtight container for up to 1 week.
