Double Chocolate Raspberry Cookie Sandwiches (GF)

Chocolate and raspberry - the dynamic flavor duo meets a duo of cookies and a swirl of tart and fresh raspberry buttercream. This Double Chocolate Raspberry Cookie Sandwich is more spectacular than you could even imagine. but, imagine this.. bright. tart. sweet. & beautiful.

I have a huge love for cookies, and I've really been loving cookie sandwiches. Two cookies filled with a swirl of buttercream are such a fun textured, tasty treat. Through the years, I have really grown to love the combination of raspberry and chocolate, and with one bite of these cookies, you'll be a believer, too!

The cookies are delicious on their own. Each cookie is loaded with chocolate and freeze dried raspberries and slightly crisp around the edges with a soft center. You can definitely enjoy them on their own, but they are even more resistible with a swirl of homemade raspberry buttercream and another cookie on top.

Ingredients for Chocolate Raspberry Cookie Sandwiches (GF)

- unsalted butter, softened

- light brown sugar

- eggs, room temperature

- vanilla extract

- cocoa powder, sifted

- gluten free flour (without xanthan gum) or all purpose flour

- xanthan gum

- baking soda

- kosher salt

- freeze dried raspberries (I would not use fresh or frozen raspberries, as they have a lot of moisture that would mess up the texture of the cookies.)

- dark chocolate chips or chopped dark chocolate

   

Ingredients for a Fresh Raspberry Buttercream

- raspberries, fresh or frozen

- granulated sugar

- water

- lemon juice and zest

- unsalted butter, softened

- powdered sugar

- heavy cream, if needed

- vanilla bean paste or vanilla extract

- lemon juice

- pinch of salt

How to Make Gluten Free Double Chocolate Raspberry Cookies with Fresh Raspberry Buttercream

1. Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.

2. In the bowl of a stand mixer fitted with a paddle attachment, combine the butter and brown sugar together until creamy, about 1-2 minutes. Don’t mix for too long - this will incorporate too much air, and the cookies will end up very flat.

3. Add the eggs, one at a time, mixing in between. Add the vanilla. Mix until combined.
Add the cocoa powder, flour, xanthan gum, baking soda, and salt and mix until just combined. Stir in the freeze dried raspberries and dark chocolate chips or chopped chocolate

4. Scoop into 2 Tablespoon balls using a spoon or a cookie scoop. Place on prepared baking sheet and bake for 9-11 minutes, or until set on the edges but not fully cooked in the middle. (Don’t over-bake the cookies - they will continue to cook on the pan as they cool.)


5. Allow cookies to cool for 5 minutes before transferring from the pan to a cooling rack to cool completely.

    

Steps to Make Fresh Raspberry Buttercream

1. First, prepare the raspberry puree: combine raspberries, sugar, water, lemon juice and
zest in a small saucepan over medium-low heat. Bring to a simmer and cook slowly, stirring often until all the berries are soft and mixture is bubbling, about 5 minutes.

2. Once the mixture has thickened, remove from the heat and strain out the seeds with a fine mesh sieve. Stick the puree in the fridge to chill while making the buttercream.

3. In the bowl of a stand mixer fitted with a paddle attachment, add the butter and beat for 2 minutes. Add the powdered sugar and mix on medium speed for 5 minutes, until light and fluffy. Add lemon juice, vanilla, and salt - adjust to your desired consistency with heavy cream. Add the cooled raspberry puree and whip until incorporated.

How to Assemble Homemade Chocolate Raspberry Sandwich Cookies

Once the buttercream has been prepared and the cookies have cooled, pair the cookies up according to size/shape. Transfer the buttercream into a pastry bag with a star piping tip, and pipe a swirl on to one cookie, and sandwich the cookies together. Enjoy!

Can I freeze Homemade Cookie Sandwiches?

These cookies freeze really well, both assembled and unassembled. You can freeze the cookies on their own and assemble them when you're ready, or you can freeze them assembled. Throw them in an airtight container or ziplock bag and freeze for up to 4 months. Thaw at room temperature when ready to enjoy.
