Blueberry Cobbler Rice Crispy Treats

That's right. Blueberry cobbler deliciousness packed into each square of gooey and decadent rice crispy treat. This rendition is a breeze to make, and it will impress all your taste-testers. Dried blueberries, white chocolate chips, and vanilla granola make these treats a real knockout.

Ingredients for Blueberry Cobbler Rice Crispy Treats

- Unsalted butter 

- Kosher salt

- Vanilla extract

- Mini marshmallows

- Rice crispy cereal

- Dried blueberries

- Vanilla granola (homemade or store-bought)

- White chocolate chips or chopped white chocolate

     

How to Make Blueberry Cobbler Rice Crispy Treats

1. Spray an 8 x 8 pan with cooking spray or line with parchment paper. Set aside.

2. In a large pot over medium-low heat, combine the butter and salt and allow to melt.

3. Add the marshmallows and vanilla and stir with a rubber spatula until all the marshmallows have melted. This might take a minute or two. 

4. In a separate bowl, toss the rice cereal, dried blueberries, and vanilla granola together. Add the dry ingredients to the melted marshmallow mixture and stir until fully coated. Once incorporated, carefully fold in the white chocolate chips or chunks - don't mix too much, otherwise the chocolate will fully melt.

5. Transfer the mixture into your prepared pan, and using a rubber spatula coated in cooking spray, press the marshmallow cereal mixture into an even layer. 

6. Allow to cool for 1-2 hours (or place in the refrigerator for 30 minutes) before slicing into 9-12 rice crispy treats. Enjoy!
