White Chocolate Macadamia Blondies (GF)

One of the best cookies, in my opinion, are ones studded with white chocolate & macadamia nuts. I also love bar cookies and blondies. So, in the spirit of combining favorite things, a White Chocolate Macadamia Blondie (that is gluten free!) is everything you crave and more.

This classic cookie's flavors are stirred into a buttery, brown sugary blondie cookie base. A crisp, yet gooey cookie bar that is perfect for a crowd and is very easy to throw together. It's all about simple ingredients with complex flavors. 

Growing up, my family and I would frequent Subway on Sunday nights after church. I would always beg for a White Chocolate Macadamia cookie to pair with my sub. They're just incredible. Chewy and soft, yet a little crisp, with creamy white chocolate and crunchy macadamia nuts - it's a perfect cookie.

I've also always loved blondies. and, I can't believe I'm saying this, but I might grab a blondie before I grab a brownie. I know, I know.. I'm a chocolate maker by trade. There's just something about the brown sugary, buttery, gooeyness of a blondie that I can't resist.

Ingredients for Gluten Free White Chocolate Macadamia Blondies

- gluten free flour blend

- xanthan gum

- baking powder

- kosher salt

- ground cinnamon

- unsalted butter, softened

- light brown sugar

- granulated sugar

- large egg, room temperature

- vanilla extract

- white chocolate chips

- macadamia nuts, roughly chopped

      

How to Make White Chocolate Macadamia Cookie Bars

1. Preheat oven to 350°F. Spray an 8 inch square baking pan with nonstick cooking spray and line with parchment, allowing  an overhang for easy removal from the pan.

2. In a medium sized bowl, combine the flour, xanthan gum, baking powder, salt, and cinnamon. Stir together and set aside.

3. In the bowl of a stand mixer, cream together the butter and sugars until light and creamy, about 2-3 minutes. Add the vanilla extract and egg, beating another 2 minutes to combine. Add the flour mixture and mix until just incorporated. Stir in the white chocolate chips and macadamia nuts. Let dough sit for 5 minutes to allow the flours to hydrate. (You can skip the resting step if you are not making gluten free blondies.)

4. Transfer the dough into the prepared baking pan and spread out evenly. Top with more white chocolate chips and nuts, if desired.

5. Bake until the edges begin to brown and the center is just set, about 20-22 minutes. 

6. Remove from the oven and cool completely before removing from the pan and slicing. Store in an airtight container for up to a week, or wrapped very well in the freezer for up to 4-5 months.
