Double Chocolate Rice Crispy Treats

Not for the faint of heart, these chocolate loaded rice crispy treats level up regular rice cereal like none other. With melted chocolate, cocoa powder, and chocolate pieces - these Double Chocolate Rice Crispy Treats are an ultimate chocolate lovers' indulgence.

As a chocolate maker, I eat quite my fair share of chocolate. (Yes, my day job includes working at a bean-to-bar chocolate factory creating chocolate, chocolate bars, and sweet confections.) I adore chocolate, and I add it to quite a lot of desserts and recipes. So, when I was craving a rice crispy treat, I decided that whatever I threw together must be met with quite a bit of chocolate. 

Growing up, my mom would make rice crispy treats rather often and sometimes she would swap half of the rice cereal for cocoa crispy cereal. While those were delicious, these chocolate filled treats are way better. They're bursting with cocoa goodness and leave you more than satisfied.

Ingredients for Double Chocolate Rice Crispy Treats

- Unsalted butter 

- Mini marshmallows

- Cocoa powder

- Dark chocolate, chopped

- Kosher salt

- Vanilla extract

- Rice crispy cereal

- Dark chocolate, chopped or chocolate chips

- Flaky sea salt, for topping

How to Make Chocolate Rice Crispy Treats

1. Spray an 8 x 8 pan with cooking spray or line with parchment paper. Set aside.

2. In a large pot over medium-low heat, add the butter and allow to melt fully.

3. Add the marshmallows and stir with a rubber spatula until all the marshmallows have melted. This might take a minute or two. 

4. Add the cocoa powder, chopped dark chocolate, salt, and vanilla. Combine and stir until chocolate has melted. Add the rice cereal and stir to combine. Add the rest of the chocolate pieces. Mix until just combined.

5. Transfer the mixture into your prepared pan, and using a rubber spatula coated in cooking spray, press the marshmallow cereal mixture into an even layer. Sprinkle with flaky sea salt, if desired.

6. Allow to cool for 1-2 hours before slicing into 9-12 rice crispy treats. Enjoy!
