Strawberry Shortcake Rice Crispy Treats

The blend of two fan favorite desserts in one flavor filled square. These Strawberry Shortcake Rice Crispy Treats are packed with goodness - gooey marshmallows, crushed graham crackers, freeze dried strawberries, and white chocolate chunks. It'll be the best rice crispy treat you've had to date.

Growing up, I was a huge fan of rice crispy treats. My mom made them often, and I have fond memories of them. We would meet up with our childhood friends at the park to play and my mom would bring a container of rice crispy treats, while my friends' mom brought a big bag of fresh, crunchy grapes. I hate a soft and squishy grape. Gross.

We would do this at least once a week, most weeks, and it was a huge highlight. We would also take rice crispy treats on roadtrips, vacations, and to church functions. They were kind of my mom's thing.

Sometimes she would change it up and use half regular cereal and half Cocoa Pebbles cereal, but I really loved it when she would make them with half regular cereal and half Fruity Pebbles cereal. I love the fruitiness and all the childhood memories those bring back each time I take a bite.

I think that's why I love these rice crispy treats so much. They're a little fruity, but they're still gooey and sweet and crunchy. They're so good. 


How to Store Rice Crispy Treats

Since the cereal is coated in the melty marshmallow goodness, the cereal stays nice and crisp for up to a week.

Store the rice crispy treats in an air tight container at room temperature for up to 7 days. 

Ingredients You'll Need to Make Strawberry Shortcake Rice Crispy Treats

- Butter, unsalted

- Kosher Salt

- Vanilla

- Mini Marshmallows

- Rice Cereal (like Rice Krispies)

- Freeze Dried Strawberries

- White Chocolate, chopped

- Graham Crackers, crushed, or vanilla wafers



       

How to Make Strawberry Shortcake Rice Crispy Treats

1. Spray an 8 x 8 pan with cooking spray and line with parchment paper, if desired. Set aside.

2. In a large pot over medium-low heat, combine the butter and salt and allow to melt.

3. Add the marshmallows and vanilla and stir with a rubber spatula until all the marshmallows have melted. This might take a minute or two. 

4. In a separate bowl, toss the rice cereal, freeze dried strawberries, and graham crackers together. Add the rice cereal mixture into the melted marshmallows and stir carefully to fully coat. Once incorporated, carefully fold in the white chocolate chunks - don’t mix too much, otherwise the chocolate chunks will fully melt.

5. Transfer the mixture into your greased pan, and using a rubber spatula coated in cooking spray, press the marshmallow cereal mixture into an even layer.

6. Allow to cool for 1-2 hours before slicing into 9-12 rice crispy treats. Enjoy!
