Milk Chocolate French Buttercream

Silky, smooth, luxurious, and oh so dreamy. This chocolate buttercream is the absolute best and richest out there. It tastes just like a chocolate mousse. Trust me, Milk Chocolate French Buttercream is about to become your new bestie.

After working in a chocolate factory for awhile now, I have become even more of a chocolate lover. I think it's always been in my blood. My grandma was always obsessed with chocolate. So, I think that's what I inherited from her. I mean, there could be worse things, right? 

I will hands down ALWAYS choose a chocolate cake over a vanilla, and a chocolate bar over any candy in existence. I just love it. 

In addition to chocolate, I also love buttercream. I will sit and eat it with a spoon. Chocolate, vanilla, lemon, coffee, cream cheese, you name it.. I love it. 

This buttercream is practically a dream come true. It tastes just as rich, velvety and luxurious as it looks. It tastes more like a chocolate mousse, and I have zero complaints about it. 


           

French buttercream is the richest of all buttercreams, because while it is similar to Italian Meringue Buttercream - instead of being made with egg whites, it is made with egg yolks. It is heavenly, rich, and decadent. It might be in my top-five all time favorite buttercreams. Dare I say?

I used this buttercream on a cake that I presented to the judges on Food Network's Halloween Wars - Season 12, Episode 3. I paired it with an Almond Sourdough Cake and a Tart Raspberry Jam. It was so delicious. 


Make it for yourself. I challenge you. It's so good. The judges said the same thing, too. I was pretty proud of that one. 


Ingredients for this Milk Chocolate French Buttercream Recipe:

- Granulated Sugar: You'll need sugar in two different increments, one for the sugar syrup and one for sprinkling into the egg yolks while they're beginning to whip.

- Water

- Egg Yolks

- Butter, very soft

- Milk Chocolate, melted and cooled

- Vanilla Extract

- Salt


The Steps to Make Chocolate French Buttercream:

1. Add egg yolks and the #2, smaller portion of sugar to the mixing bowl of a stand mixer. 

2. Combine the #1 (larger portion) sugar and water in a saucepan with a thermometer ready to keep up with the temperature. 

3. Bring the sugar and water to a boil and cook until it reaches 239F. At the same time, begin whipping the egg yolks and sugar until it becomes light, fluffy, and pale. 

4. Once the sugar syrup has reached 239F - turn the speed of your mixer up and begin pouring the syrup in a steady stream towards the edge of the bowl, while mixing. Add all the syrup and let the mixture whip until it cools down to about room temperature. This mixture of egg yolk + sugar syrup is called a "Pate a Bombe." 

5. Once the egg yolk mixture has cooled to room temperature, begin adding very softened butter. 

6. Let this whip until it is completely combined. This could take 3-4 minutes.

7. Add your melted and cooled chocolate, a little vanilla, and kosher salt, and you're set. Bravo - you now have this delicious, chocolatey mousse-like buttercream that is dang perfect.
